May's Harvest of the Month is BERRIES!

Berries offer many health benefits. Aside from being rich in key vitamins and minerals, berries have a lot of cancer-fighting antioxidants within the rich color pigments found in them. Strawberries, blueberries, raspberries, and black berries are a few examples of berries currently in season. Visit your local farmers' market and try some today!

Berries can be a healthy addition any snack, any time of the day. At breakfast, you can throw a few into your oatmeal or yogurt. You can add them to pancakes, muffins, and other baked goods. They are a great flavor booster for salads as well. You can also freeze berries and add them to your morning kale smoothie. You can also make them into preserves or jams, or just enjoy them as is!

Did you know berries could also make a refreshing addition to salsa?

Here's an easy to follow recipe for Strawberry-Avocado Salsa with Cinnamon Tortilla Chips from Cooking

2 teaspoons canola oil
6 (6-inch) whole-wheat flour tortillas
2 teaspoons sugar
1/2 teaspoon ground cinnamon
1 1/2 cups finely chopped peeled ripe avocado (about 2)
1 cup finely chopped strawberries
2 tablespoons minced fresh cilantro
1 teaspoon minced seeded jalapeño pepper
2 teaspoons fresh lime juice
3/8 teaspoon salt

1. Preheat oven to 350°.

2. To prepare chips, brush oil evenly over one side of each tortilla. Combine sugar and cinnamon; sprinkle evenly over oil-coated sides of tortillas. Cut each tortilla into 12 wedges; arrange wedges in a single layer on two baking sheets. Bake at 350° for 10 minutes or until crisp.

3. Combine avocado and remaining ingredients; stir gently to combine. Serve with chips.

Now doesn't that sound berry appealing?
